Christmas Pudding: Historical Alchemy, Socio-Cultural Code, and Molecular Gastronomy Christmas Pudding (Christmas Pudding, also known as "plum pudding") is not just a dessert, but a complex gastronomic, historical, and social artifact of the United Kingdom and the Commonwealth. Its dense, dark, rich texture and taste are the result of centuries of evolution, reflecting changes in trade, technology, religious practices, and family rituals. 1.
